Marinated Flank Steak Over Coconut Rice with Mango Salsa.

This is in the running for the perfect dinner award. Every element compliments and elevates the rest. Simple ingredients combined to create epic flavor. This is marinated flank steak over coconut rice with mango salsa must-make!

Flank Steak | Coconut Rice | |
1 lb Flank Steak | 1 1/2 Cups Jasmine Rice | Cubed 2 Mangos & 1 Avocado |
1/4 Cup Soy Sauce | 1 1/2 Cups Coconut Water | Chopped 1/4 Red Onion, 1 Red Bell Pepper |
3 Tbs Brown Sugar | 1 Can Coconut Milk | Rough Chop Cilantro |
2 Cloves Minced Garlic | | 1/2 Diced Jalapeno |
1 Tbs Fresh Grated Ginger | | Juice of 1-2 limes + S&P to taste |
METHOD:
STEP 1: Combine 1/4 cup soy sauce, 3 Tbs brown sugar, 2 cloves minced garlic, and 1 Tbs freshly grated ginger and marinate the steak for at least 30 minutes, up to 24 hours in the refrigerator.
STEP 2: While the steak is marinating, make your Coconut Rice. Use 1.5 cups of Jasmine rice (rinsed), along with 1.5 cups of coconut water and 1 can of coconut milk instead of plain water, and cook rice as normal (rice cooker or over the stovetop okay). Detailed instructions can be found here.

STEP 3: Wash and chop your fresh veggies and mango. Combine all Mango Salsa ingredients in a large bowl and mix gently. Try not to eat all of it as your appetizer and save some for dinner! Click here for more detailed instructions.
STEP 4: Throw the steak on the grill over direct heat for 2 minutes per side. Let it rest for 5 minutes, then slice and serve over Coconut Rice and top with Mango Salsa!
