EASY Mediterranean-Inspired Chicken Casserole

STEP 1: Preheat oven to 350F and lightly grease a 9x13 baking dish. Gather and prep your ingredients: 5 cups of Chicken stock, 1 diced onion, 2-4 cloves of minced garlic, 2 cups of white rice (basmati recommended), 4 Tbs salted butter divided (Kerrygold recommended), 1 cup of heavy cream, 2 Tbs flour, 1 lemon (zest & juice), 2 Tbs all-purpose Greek Seasoning, 2tsp turmeric (optional, but highly recommended), and 4-6 chicken thighs.

STEP 2:
Extra Tasty Way: In a frying pan, heat 2 Tbs of butter with a dash of oil (to help prevent the butter from burning) and saute the diced onion first, then add minced garlic once the onions become translucent. Add the zest and juice from one lemon then sprinkle about 1 Tbs of All-purpose Greek seasoning, and 1-2 tsp of turmeric powder. Mix with a wooden spoon to combine, then add 2 cups of long-grain white rice (Basmati recommended). Stirring continuously, incorporate and coat the rice with the aromatics, and allow the rice to toast for about 2 minutes. Transfer the entire mixture to a lightly greased 9x13 baking dish.
Extra Easy Way: Lightly grease a 9x13 baking dish. Add 1 diced onion, 2-4 minced garlic cloves, 2 cups of white rice, zest and juice from one lemon, 2 Tbs melted butter, and 1-2 tsp of turmeric directly to the baking dish. Mix with a wooden spoon to incorporate the ingredients together.
STEP 3: Sprinkle 2 Tbs of flour over the rice mixture. Add 5 cups of chicken stock and 1 cup of heavy cream. Gently mix to combine ensuring flour has been completely mixed in.
STEP 4: Add chicken thighs skin-side up. Brush skin with remaining 2 Tbs of melted butter and sprinkle with all-purpose Greek seasoning.
STEP 5: Cover with aluminum foil and bake at 350F for one hour. After one hour, remove the foil and bake for an additional 30 minutes. After a total of 90 minutes check to ensure internal chicken temperature is at least 165F. Switch the oven to BROIL for 2 minutes to crisp up the chicken skins; keep a careful watch during this time to ensure it doesn't burn.

STEP 6: Optional garnish with lemon slices and fresh herbs (green onion suggested). Serve with a Simple Greek-Style Salad and ENJOY EVERY BITE!!!
